Yacon is a perennial plant of 1.5 to 3 meters. The root system is composed of roots and fleshy in number from 4 to 20, which can reach a size of 25 cm. long and 10 cm. diameter, and an extensive system of thin fibrous roots. The adventitious roots are growing nature evolved and branched trunk formed by short, thick rhizomes simpódicos.
